NO Crust Zucchini Quiche !

It's Zucchini Season!



- 6 eggs
- 1 lb grated zucchini (drained)
- 1 medium diced onion
- 1 medium diced red pepper
- 1 cup grated cheddar (or preferred cheese)
- 1/2 cup of cream or whole milk
- 2 tbsp. pepper
- 1 tbsp. salt
- 1 tbsp. oregano
- 1 tbsp. parsley
- 1/2 cup of bread crumbs (I use Italian seasoned)


-Preheat oven to 350° (F)

-Brown onions and red peppers (with a spoonful of butter), add grated zucchini to cook for a few minutes

-In a bowl, mix 6 beaten eggs, milk/cream salt, pepper, oregano, parsley and bread crumbs

-Mix in 1/2 cup cheddar

-Let onions, red peppers and grated zucchini cool before mixing in with rest of ingredients

-Grease a baking pan (I used a round cake pan)

-Mix all ingredients together in bowl, pour in pan, sprinkle remaining 1/2 cup of cheddar over top

-Bake for 35 minutes (or until it's settle throughout)
